Oyster Mushroom Stir-Fry

Ingredients:

  • 2 cups Oyster mushrooms, sliced
  • 2 cups assorted vegetables (bell peppers, broccoli, snap peas, carrots, etc.), sliced
  • 2 cloves garlic, minced
  • 1-inch piece of fresh ginger, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • 1 tablespoon cornstarch
  • Salt and pepper to taste
  • Cooked rice or noodles for serving

Instructions:

  1. In a small bowl, whisk together soy sauce, sesame oil, and cornstarch to make the sauce. Set aside.
  2. Heat the vegetable oil in a large skillet or wok over high heat.
  3. Add the garlic and ginger and stir-fry for about 30 seconds, or until fragrant.
  4. Add the Oyster mushrooms and assorted vegetables. Stir-fry for 5-7 minutes until they start to brown and become tender.
  5. Pour the sauce over the mushrooms and vegetables. Stir well and cook for an additional 2-3 minutes until the sauce thickens.
  6. Season with salt and pepper.
  7. Serve the Oyster Mushroom Stir-Fry over cooked rice or noodles.
