Ingredients:

  • 8-10 large Lion’s Mane mushroom clusters
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced

  • 1 teaspoon smoked paprika
  • 1/2 teaspoon sea salt

Instructions:

  1. Clean and Prepare the Lion’s Mane Mushrooms:
    • Gently wipe the Lion’s Mane mushrooms with a damp paper towel to remove any dirt or debris.
    • Cut the Lion’s Mane into thick, scallop-sized medallions, about 1/2 to 3/4 inch thick.
  2. Marinate the Mushrooms:
    • In a small bowl, whisk together the olive oil, minced garlic, soy sauce or tamari, lemon juice, smoked paprika, sea salt, and black pepper.

  3. Cook the Lion’s Mane “Scallops”:
    • Heat a skillet or frying pan over medium-high heat.

    • Cook for 2-3 minutes on each side until they are golden brown and slightly caramelized.
