Chestnut Mushroom and Spinach Stuffed Chicken Breast

Ingredients:

  • 2 boneless, skinless chicken breasts
  • 1 cup Chestnut Mushrooms, finely chopped
  • 1 cup fresh spinach, chopped
  • 2 cloves garlic, minced
  • 1/2 cup mozzarella cheese, shredded
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Toothpicks

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat one tablespoon of olive oil over medium heat. Sauté the garlic for a minute, then add the chopped Chestnut Mushrooms and spinach. Cook until the mushrooms are browned, and the spinach wilts. Season with salt and pepper.
  3. Butterfly the chicken breasts, then stuff each with the mushroom and spinach mixture and a sprinkle of mozzarella cheese. Secure the chicken breasts with toothpicks.
  4. In the same skillet, add the remaining olive oil. Sear the chicken breasts for 2-3 minutes on each side until they’re nicely browned.
  5. Transfer the chicken breasts to a baking dish and bake for 20-25 minutes or until the chicken is cooked through and the cheese is bubbly.
  6. Serve your Chestnut Mushroom and Spinach Stuffed Chicken Breast with a side of steamed vegetables or a fresh salad.
